摘要
苯乳酸作为纯天然存在的小分子物质,由于具有比其他的防腐剂抑菌范围更广,抑菌效果更稳定、更安全,以及具有更良好的溶解性和稳定性等优点,逐渐代替化学防腐剂成为新型添加剂。苯乳酸的应用范围很广泛,在医药、化妆品以及饲料等行业中具有良好的应用前景。苯乳酸的化学合成存在副产物较多、工艺路线复杂以及控制条件相对苛刻等缺点,因此从微生物发酵法、全酶催化法、全细胞催化生物合成法以及苯乳酸的理化性质、抑菌机制和应用等方面进行综述,为苯乳酸的高效生产和应用提供新思路。
Phenyllactic acid is a small molecule substance that occurs naturally.Due to the wider range of bacteriostasis than other preservatives,and the antibacterial effect is more stable and safer,it has the advantages of good solubility and stability,so that it gradually replaces chemical preservatives as a new additive.Phenyllactic acid has a wide range of utilization and has good application prospects in medicine,cosmetics and feed industries.In the process of chemical synthesis,benzolatic acid has the disadvantages of generating many by-products,complex process routes and relatively harsh control conditions.Therefore,the microbial fermentation method,the whole enzyme catalytic method,the whole cell catalytic biosynthesis method,and the physical and chemical properties,bacteriostatic mechanism and application of phenyllactic acid are reviewed.The purpose is to provide new ideas for the efficient production and application of phenyllactic acid.
