脂肪酶催化油茶籽油制备中长链甘油三酯的研究

摘要 以油茶籽油和辛酸为底物,1,3-特异性固定化脂肪酶为催化用酶,在单因素试验的基础上,通过正交试验获得酯化反应制备MLM型中长链甘油三酯的最适条件:反应时间10 h、反应温度50℃、底物(油茶籽油∶辛酸)摩尔比1∶3.5;以底物质量为基准,固定化脂肪酶RM加入量9.0%、加水量4.0%,在此条件下辛酸插入率为54.51%,其中8.27%±0.14%的辛酸位于MLM型中长链甘油三酯的sn-2位上,MLM型中长链甘油三酯的酸价、过氧化值等理化指标均符合植物油的国家标准。 Using camellia seed oil and caprylic acid as substrate and 1,3-specific immobilized lipase as catalytic enzyme,the optimal conditions for esterification to prepare MLM-type medium and long chain triglycerides were obtained through orthogonal test on the basis of single factor test.The reaction time was 10 h,the reaction temperature was 50℃,the molar ratio of the substrate(camellia oil:caprillic acid)was 1:3.5.Based on the mass of the substrate,the addition amount of immobilized lipase RM was 9.0%and the addition amount of water was 4.0%.The insertion rate of caprylic acid was 54.51%,and 8.27%±0.14%of caprylic acid was located at the sn-2 position of MLM-type medium and long chain triglyceride.The physical and chemical indexes of MLM-type medium and long chain triglyceride,such as acid value and peroxide value were in line with the national standard for edible vegetable oil.
