苏式糕点的传承与发展

The Inheritance and Development of Suzhou-Style Dimsum

摘要 苏式糕点作为苏州特有的美食,有着丰富的历史底蕴和独特的风味,被誉为“南点”,深受人们喜爱。然而,随着时代的变迁和社会的发展,苏式糕点也面临一些困境和挑战。为了保护苏式糕点的制作技艺、促进苏式糕点的文化发展,采用文献研究、归纳总结等方法,对苏式糕点当前的发展现状进行阐述,结果表明苏式糕点当前存在市场竞争激烈、制作工序繁琐、国际知名度低等困境。针对当前现状,提出加强苏式糕点制作技艺保护、丰富苏式糕点文化内涵、促进苏式糕点创新开发和提升苏式糕点国际知名度等实施方案,旨在保护人类这一瑰宝,促进苏式糕点的传承与发展。 As an unique delicacy in Suzhou,Suzhou-style pastries have rich historical heritage and unique fiavors,and are known as“southern pastries”,which are deeply loved by people.However,with the changes of the times and the development of society,Suzhou-style dimsum also faces some difficulties and challenges.In order to protect the production techniques of Suzhou-style pastries and to promote the cultural development of Suzhou-style dimsum,this article uses methods such as literature research and summarization to elaborate on the current development status of Suzhou-style dimsum.The results show that there are difficulties in the current market competition,complicated production processes,and low international recognition of Suzhou-style dimsum.In response to the current situation,it is proposed to strengthen the protection of Suzhou-style dimsum production techniques,to enrich the cultural connotations,to promote the innovative development and to enhance the international reputation of Suzhou-style dimsum.The implementation plan aims to protect this treasure of humanity and to promote the inheritance and development of Suzhou-style dimsum.
