摘要
蔬菜中含有大量含硫活性物质,不仅可提高蔬菜产量及品质,还具有较强的抗炎、抗氧化、提高免疫力等生理功能。通过提取分离得到含硫活性物质,可开发新型的抑菌保鲜产品。有关含硫活性物质的分析和检测方法如色谱法、电化学法等技术在近几十年间发展迅速,使得蔬菜中微量含硫活性物质的定性及定量检测更加迅速、科学、准确,对于促进含硫活性物质的多元化开发和多层次利用具有重要意义。综述蔬菜中含硫活性物质的种类和检测方法,总结含硫活性物质在抑菌领域的应用进展,并对未来发展趋势和研究挑战进行展望,以期为蔬菜中含硫活性物质快速鉴定检测、新型抑菌产品研发和功能成分综合利用提供参考依据。
Vegetables contain a large amount of sulfur-containing active substances,which not only can improve the yield and quality of vegetables,but also have strong anti-infiammatory,antioxidant,immunity-boosting and other physiological functions.By extracting and separating the sulfur-containing active substances,new types of antibacterial preservation products can be developed.Analytical and detection methods concerning sulfur-containing active substances,such as chromatographic and electrochemical techniques,have been developed rapidly in recent decades,which have led to more rapid,scientifc and accurate qualitative and quantitative detection of trace sulfur-containing active substances in vegetables.It is of great importance to promote the diversifed development and multi-level utilization of sulfur-containing active substances.Therefore,introduce the types and detection methods of sulfur-containing active substances in vegetables.The progress of the application of sulfur-containing active substances in the feld of bacterial inhibition is systematically summarized,and the future development trends and research challenges are prospected.It is intended to provide reference for the rapid identifcation and detection of sulfur-containing active substances in vegetables,the development of novel antibacterial products and the comprehensive utilization of functional components.
