摘要
益生菌具有诸多健康作用,但由于在加工、储存以及人体消化过程中易受到环境因素影响,致其活力下降,无法顺利到达肠道发挥益生功能。膳食纤维具有良好的生物相容性、胶凝性和成膜性等特点,且来源广泛,作为微胶囊壁材具有巨大潜力。通过膳食纤维微胶囊技术可以为益生菌提供保护,提高其存活率、稳定性并实现在肠道中的控制释放。文章综述了膳食纤维壁材的来源、特性及其微胶囊化益生菌的制备方法,以及膳食纤维微胶囊在提高益生菌稳定性、控制释放和功能特性方面的应用,并对其在功能递送方面的发展前景进行了展望。
Probiotics have many health benefits.However,probiotics are easily affected by environmental factors during processing,storage,and human digestion,leading to a reduced vitality and bioavailability to intestine to exert probiotic functions.Dietary fiber has great potential as microcapsule wall materials due to its good biocompatibility,gelation,and film-forming properties as well as a wide range of sources.Dietary fiber microencapsulation technology can provide protection for probiotics,improve their survival rate,stability and achieve controlled release in the intestine.This paper reviews the sources and characteristics of dietary fiber and the preparation methods of microencapsulated probiotics,as well as the application of dietary fiber microcapsules in improving the stability,controlling the release and functional properties of probiotics.Furthermore,we also prospect the development trend of dietary fiber microcapsules as delivery systems.
