库尔勒香梨采后品质劣变与贮藏保鲜研究进展 被引量:1

摘要 库尔勒香梨酥脆爽口、皮薄多汁,富含多种营养物质,备受关注,香梨水分含量高,在贮藏过程中容易发生果实失水变皱、腐烂变质、风味变差等现象,导致香梨营养丢失、品质下降、不易贮藏。该研究首先介绍了影响香梨贮藏效果的因素,然后从物理保鲜技术、生物保鲜技术、化学保鲜技术等方面阐述库尔勒香梨贮藏保鲜中的应用现状,为采后库尔勒香梨贮藏保鲜提供参考和指导。 Korla pear crisp and refreshing,thin juicy skin,rich in a variety of nutrients,has attracted much attention,pear moisture content is high,in the process of storage prone to fruit water loss wrinkle,rot and deterioration,resulting in pear nutrition loss,quality decline,not easy to store.This study firstly introduced the factors that affect the storage effect of Korla pear,and then expounded the application status of Korla pear storage and preservation from the aspects of physical preservation technology,biological preservation technology and chemical preservation technology,in order to provide reference and guidance for the storage and preservation of Korla pear after postharcrop.
