中国饮食酸甜咸辣口味偏好的地理分布研究 被引量:1

摘要 民以食为天,传统饮食在满足人们色香味感知的同时,传达着不同地区人群内心的情感认同,与当地的传统习俗、思想哲学等联系密切。基于酸、甜、咸、辣四种口味偏好评价体系的构建,通过对各地方菜谱用料和餐馆兴趣点分布的定量分析,探究不同地区人群口味偏好的空间分布特征,并讨论地方饮食习惯与自然地理环境、地方经济发展以及人口时空流动的关系。结果表明,我国各地饮食口味偏好总体呈现菜品丰富、营养均衡的趋同化发展,但酸、甜、咸、辣四种口味偏好存在着空间集聚现象,在互相影响的同时追求地域个性化发展。一般而言,在地理和经济条件优越的地区,饮食文化更加包容多元,并且在口味的碰撞与交流中,实现不断的升级创新。 Traditional diet not only satisfies people’s perception of color,flavor and taste,but also conveys their inner emotional identity in different regions,which is closely connected with local traditional customs,ideology and philosophy.Based on the construction of the evaluation system for preferences of sour,sweet,salty and spicy taste,this paper explores the spatial distribution characteristics of taste preferences of people through the quantitative analysis of the distribution of ingredients used in recipes and points of interest in restaurants in different regions,and discusses the relationship between local eating habits and natural geographical environment,local economic development,and the temporal and spatial flow of population.The results show that the taste preferences in different regions of China generally present a convergence of rich dishes and balanced nutrition,but the preferences of four taste,sour,sweet,salty and spicy have a spatial agglomeration phenomenon,and pursue regional personalized development while influencing each other.Generally speaking,in areas with superior geographical and economic conditions,food culture is more inclusive and diverse,and in the collision and exchange of tastes,continuous upgrading and innovation are achieved.
