石岐鸽、欧洲肉鸽米玛斯品系及其杂交组合屠宰性能、肉蛋品质比较分析 被引量:2

摘要 该研究旨在比较石岐鸽(SQ)、欧洲肉鸽米玛斯品系(后称米玛斯,MMS)及其杂交组合屠宰性能、肉质和蛋品质的差异,为培育肉鸽新配套系提供参考。该试验选用21日龄SQ、 MMS、[SQ (母本)×MMS (父本)](SMA)和[SQ (父本)×MMS (母本)](SMB) 4个群体,共计4组乳鸽,每组40只进行屠宰性能和肉质测定,同时每组各选择40枚鸽蛋进行蛋品质测定。结果显示,SMA、 SMB的活体重显著大于MMS、 SQ (P<0.05),SMB的全净膛率和半净膛率与MMS、 SQ无显著差异(P>0.05), SMA的蛋黄颜色深度显著高于SQ (P<0.05)。蛋黄重指标,SMA、 MMS显著高于其他两组(P<0.05),其中SMA的蛋黄重在4组中最重。综上,MMS和SQ及其两个杂交组合的乳鸽均拥有良好的产肉性能,其中SMB胸肌的屠宰性能、肉色、滴水损失都较其他品种(杂交配套)较好,SMA的蛋黄和蛋白质量较其他品种(杂交配套)较好。 The aim of this study is to compare the differences in slaughter performance,meat quality,and egg quality between the Shiqi pigeon(SQ),the European meat pigeon Mimas strain(later called Mimas,MMS),and their hybrid combinations,in order to provide reference for cultivating new mating lines of meat pigeons.This experiment selected 21 day old SQ,MMS,[SQ(female)×MMS(male)](SMA)and[SQ(male)×MMS(female)](SMB)4 groups,4 groups of squab in total,40 pigeons in each group for slaughter performance and meat quality testing,and 40 eggs in each group for egg quality testing.The results showed that the live weight of SMA and SMB was significantly higher than that of MMS and SQ(<0.05),and there was no significant difference in the full bore rate and half bore rate of SMB compared to MMS and SQ(P>0.05).The egg yolk color depth of SMA was significantly higher than that of SQ(<0.05).In the egg yolk weight indicators,SMA and MMS,were significantly higher than the other two groups(P>0.05),with SMA having the heaviest egg yolk weight among the four groups.The MMS,SQ and their two hybrid combinations all had good meat production performance.Among them,the slaughtering performance,meat color and drip loss of SMB pectoral muscle were better than those of other breeds(hybrid combinations),and the egg yolk and protein quality of SMA were better than those of other breeds(hybrid combinations).
