摘要
桑叶中蛋白质含量较高,氨基酸种类丰富,桑叶蛋白酶促水解产物具有抗氧化等功效。桑叶蛋白应用前景广阔,可应用于食品、保健品、医药等领域。介绍了桑叶蛋白的提取工艺,并对应用现状进行分析,为桑叶蛋白的进一步开发和利用提供参考。
The protein content of mulberry leaves is high,and the amino acids are rich,the hydrolysates of protein in mulberry leaves have antioxidant activity,the protein can be used in many fields,such as food,health products,medicine and so on.In this paper,the extraction technology of mulberry leaf protein was introduced,and the application status was analyzed,which provided reference for further development and utilization of mulberry leaf protein.
