京杭大运河视野下杭州皋亭山饮食文化研究

On Food Culture of Gaoting Mountain in Hangzhou from the Perspective of Beijing-Hangzhou Grand Canal

文章在讨论杭州皋亭山班荆馆赐宴、皋亭山食物原料、当地食俗演变的基础上,重点探讨皋亭山经由京杭大运河的作用下,如何使得南北饮食文化发生融合的现象。皋亭山南的上塘河(古运河)是杭州市域范围内史书记载的最早的人工水道(春秋时期的吴故水道)的组成部分,皋亭山周边水网及山道环境,承载着杭州吴越时期以来的地域性饮食传统。在新时代浙江“宋韵文化传世工程”建设体系下,传承着两宋时期繁盛的上塘河食货流通知识和遗产,对于丰富和发展杭州宋韵生活文化内涵具有重要的历史和现实意义。

This paper describes the food culture of Gaoting Mountain,including its official banquet of the Banjing Embassy,food ingredients,and the evolution of the local food customs.The focus will also be on how the Gaoting Mountain contributed to the fusion of northern and southern food cultures with the help of the Grand Canal.The water network and mountain path environment surrounding Gaoting Mountain has carried the regional culinary traditions of Hangzhou since the early years of the tenth century.The Shangtang River,an ancient canal to the south of Gaoting Mountain,is part of the earliest man-made waterway recorded in the history of Hangzhou.Under the construction system of“Song Dynasty Culture Heritage Project”of Zhejiang in the new era,the knowledge and heritage of the flourishing food circulation of the Shangtang River during the two Song dynasties are inherited,which is of great historical and practical significance for the enrichment and development of the cultural connotation of the Song lifestyle in Hangzhou.
