惠州市惠阳区市售食品污染监测结果分析

摘要 目的:了解惠阳区市售食品污染情况,为辖区食品安全风险评估提供数据支持。方法:按随机抽样原则,在惠阳区平潭、良井、永湖、沙田、镇隆、新圩、三和、秋长和淡水9个乡镇(街道)的商超、农贸市场和油炸坊采集大米、熟肉制品、凉拌菜和花生油各54份,共计216份样品进行大米中砷和铅,熟肉制品中沙门氏菌、单核细胞增生李斯特氏菌、金黄色葡萄球菌和亚硝酸盐,凉拌菜中金黄色葡萄球菌和亚硝酸盐,散装花生油中黄曲霉毒素B1检测。结果:惠阳区216份市售食品总体污染率为3.24%(7/216),各污染物中沙门氏菌污染率(5.56%)最高,结果仅与金黄色葡萄球菌污染率存在差异(P确切=0.0357,P<0.05);微生物致病菌污染率高于化学污染物污染率;熟肉制品污染率(5.56%)在4类市售食品中污染率最大;淡水街道和平潭镇是本次食品安全风险监测中污染较严重的镇(街道);农贸市场污染率较商场高。结论:惠州市惠阳区市售食品污染率在污染物类别、食物品种、行政区域和销售场所方面有所差异。政府应该加强全区域全方位的食品安全风险监测工作,长期监测食品安全风险情况,为食品安全预警提供科学合理的数据支持。 Objective:To understand the pollution status of commercial cooked-meat products in Huiyang and evaluate their dietary health risks,so as to provide data support for food safety risk assessment in Huiyang.Method:Based on the principle of random sampling,54 samples of rice,cooked meat products,salad and bulk peanut oil were collected from supermarkets,farmers’markets and deep-frying shops in Pingtan,Liangjing,Yonghu,Shatian,Zhenlong,Xinxu,Sanhe,Qiuchang and Danshui towns(streets)in Huiyang district.A total of 216 samples,such as arsenic and lead in rice;Salmonella,Listeria monocytogenes,Staphylococcus aureus and nitrite in cooked meat products and Staphylococcus aureus and nitrite in salad were collected for testing;aflatoxin B1 in bulk peanut oil.Result:The overall contamination rate of 216 food samples in Huiyang district was 3.24%(7/216),and the contamination rate of Salmonella was the highest(5.56%),which was only different from that of Staphylococcus aureus(Pexactly=0.0357,P<0.05).The pollution rate of microbial pathogens is higher than that of chemical pollutants;the contamination rate of cooked meat products(5.56%)is the highest among the four kinds of commercial food.Danshui street and Pingtan town are the towns(streets)with serious pollution in this food safety risk monitoring.The pollution rate of farmers’market is higher than that of supermarkets.Conclusion:The contamination rate of commercial food in Huiyang district of Huizhou city is different in pollutant categories,food varieties,administrative regions and sales places.The government should strengthen all-round food safety risk monitoring in the whole region,monitor food safety risks for a long time,and provide scientific and reasonable data support for food safety early warning.
