摘要
为解决禽肉糜、肉馅以及一些高黏度混合酱体等物料定量分装技术难题,通过深入分析物料特性,对比各种分装方式,提出一种称重式计量食品馅料定量分装设备设计方案,并根据方案进行设备试制。经生产实测,设备分装质量范围为5~15 kg,分装误差在10 g以内,满足食品馅料的大剂量分装生产需求。研究为黏稠体定量分装技术研究提供参考。
In order to solve the technical problems of quantitative packing of poultry minced meat,meat stuffing and some high viscosity mixed sauces,through in-depth analysis of material characteristics and comparison of various methods of packing,a technical scheme for the design of weighing-type quantitative packing equipment for food fillings was proposed,and according to the technical scheme,the trial-manufacture of the equipment was carried out.The experimental results show that the quality range of the equipment is from 5 kg to 15 kg,and the error of the equipment is less than 10 g,which meets the production demand for large-dosage packing of food fillings.The research can provide some references for the researchers of viscous bulk quantitative packing technology.
