西印度醋栗表型性状及营养成分测定分析

摘要 通过测定分析西印度醋栗果实的表型性状、营养成分及微量元素含量,为西印度醋栗的开发利用提供参考。结果表明,西印度醋栗果实可食率达96.192%,果实富含水分(89.283%)且粗纤维含量低(0.442%),营养成分和微量元素含量丰富,其中,总糖含量为3.000%;总酸含量为2.302%;蛋白质含量为0.802%;VC含量为1.188 mg/hg,P、Ca、Mg三种元素的含量较高,分别为192.667、111.833、58.717 mg/kg。西印度醋栗可作为新的食品功能因子来源,开发潜力较大。 To provide a reference for the development and utilization of Phyllanthus acidus,the phenotypic characteristics,nutritional components,and trace elements of P.acidus fruits were determined and analyzed in this paper.The results showed that the edible rate of P.acidus fruits was 96.192%.The fruit of P.acidus is rich in water(89.283%)and low in crude fiber(0.442%).There are rich nutritional components and trace elements in P.acidus fruit.Among them,the content of total sugar was 3.000%,the content of total acid was 2.302%,the content of protein was 0.802%,the content of vitamin C was 1.188 mg×hg^(-1),and the contents of P,Ca,and Mg were relatively high,at 192.667,111.833,and 58.717 mg×hg^(-1),respectively.P.acidus can be used as a new source of food functional factors and has a high potential for development.
