摘要
随着美国FSMA配套法规117法规的实施,各输美食品企业进行了配套食品安全体系的建设。论述了以预防性措施为基础的凝胶糖果的食品安全计划。此食品安全计划从凝胶糖果的生产工艺、危害分析、过程预防性控制措施及其控制措施的确认研究、过敏原预防性控制措施、卫生预防性控制措施、供应链预防性控制措施入手,阐述了不同阶段预防性控制措施的目的、程序、纠正、验证等。
With the implementation of the FSMA supporting regulations 117 in the United States,various food companies exporting to the United States have undertaken the construction of supporting food safety systems.This paper discussed the food safety plan of gel candy based on preventive measures.This food safety plan started with the manufacture process of gummy,hazard analysis,process preventive controls and the confirmation study of controls,allergen preventive controls,sanitation preventive controls,supply-chain preventive controls,and described the purpose,procedure,corrections,verification,etc.of preventive controls at different stages.
