摘要
黄芪具有增强免疫、抗肿瘤、保护心脑血管系统、保护内脏、调节机体代谢以及保护神经系统等众多生理作用,多糖、黄酮和皂苷为其主要活性成分。2020年黄芪获批为药食两用资源,为黄芪在普通食品中的应用提供了相应的法律法规支持。本文阐述黄芪在生物活性成分的研究进展,并总结其在近5年食品加工中的应用现状和不足,为更好的开发和利用黄芪提供参考和依据。
Astragalus membranaceus has the functions of enhancing immunity,anti-tumor,protecting cardiovascular and cerebrovascular system,protecting internal organs,regulating body metabolism,and protecting nervous system.Polysaccharides,flavonoids and saponins are its main active components.In 2020,Astragalus membranaceus was approved as a dual-used resource for medicine and food,providing corresponding legal and regulatory support for its application in food processing.This paper reviewed the bioactive components,physiological and pharmacological functions of Astragalus membranaceus,summarized its application status and shortcomings in food processing over the past 5 years,it will provide reference and basis for better development and utilization of Astragalus membranaceus.
