摘要
目的:建立阿胶产品的鉴别方法。方法:阿胶、牛皮胶和猪皮胶经胰蛋白酶酶解处理,采用高效液相色谱-质谱联用法检测,通过比较3种胶酶解产物中多肽的差异,找到阿胶、牛皮胶和猪皮胶的特征离子对。结果:经验证,通过检测阿胶产品酶解液中的特征离子对即可鉴别出阿胶产品的种类。结论:该方法专属性强、灵敏度高,是一种有效的阿胶鉴别方法。
Objective:To establish a method for the identification of Ejiao products.Method:Ejiao,cattle-hide gelatin and pig-hide gelatin were enzymatically treated with trypsin,and the differences of polypeptides in the enzymolysis products of the three gelatins were compared using high-performance liquid chromatography-mass spectrometry,so as to find the characteristic ion pairs of Ejiao,cattle-hide gelatin and pig-hide gelatin.Result:It is verified that the type of Ejiao products can be identified by detecting the characteristic ion pairs in the enzymatic hydrolysate gelatin products.Conclusion:The method is specific and sensitive,and it is an effective method for identifying Ejiao.
