摘要
生物保鲜剂具有良好的抑菌特性,且天然、安全、易降解,近年来在水产品保鲜中得到较多研究与应用。本文综述了常见的生物保鲜剂及抑菌机理,并介绍了生物保鲜剂与其他保鲜技术结合在水产品保鲜中的应用情况,旨在为水产品生物保鲜技术的进一步改进提供参考。
Biological preservative has good bacteriostatic properties,and is natural,safe and easy to degrade.In recent years,it has been widely studied and applied in the preservation of aquatic products.This paper reviewed the common biological fresh-keeping agents and their bacteriostatic mechanism,and introduced the application of biological fresh-keeping agents combined with other fresh-keeping technologies in the preservation of aquatic products,in order to provide reference for further improvement of biological fresh-keeping technology of aquatic products.
