摘要
随着科学技术的不断进步,食品掺假现象层出不穷,不断打击消费者对食品安全的信心。目前蛋白质检测技术已广泛应用于食品检测和食品掺假鉴定等领域,并展现出巨大的发展潜力。本文综述了蛋白质检测技术在食品掺伪鉴别方面的应用,以期为蛋白质检测技术在食品鉴伪中的应用提供有益的参考。
With the continuous progress of science and technology,food adulteration has emerged one after another,continuously undermining consumers’confidence in food safety.At present,protein detection technology has been widely applied in fields such as food detection and food adulteration identification,and has shown enormous development potential.This article reviews the application of protein detection technology in food adulteration identification,in order to provide useful references for the application of protein detection technology in food adulteration identification.
