燕窝的鉴定方法及深加工工艺研究

Study on Identification Method and Deep Processing Technology of Bird's Nest

燕窝,又称燕菜、燕根、金丝等,自明代开始进入宫廷,成为御用补品,是一种药食同源的滋补品,有“稀世名药”“东方珍品”的美称。燕窝中含有丰富的唾液酸、蛋白质、氨基酸及其他生物活性物质,适当摄入可促进大脑发育和细胞修复、提高人体免疫能力。《本草求真》记载燕窝具有滋补的功效,对肺、肾和胃都具有一定的保健和调理作用。因此,本文从燕窝的成分及功效、鉴定方法以及深加工工艺3个方面进行了研究。

Bird's nest,also known as swallow vegetable,swallow root,gold wire,etc.,since the Ming dynasty began to enter the court,became the imperial tonic,is a kind of medicine and food homologous tonic,has the“rare medicine”and“Oriental treasures”laudatory name.Bird’s nest contains rich sialic acid,protein,amino acid and other bioactive substances,appropriate intake can promote brain development and cell repair,improve human immunity.It is recorded in Seeking Truth in Materia Medica that bird’s nest has nourishing effect and has certain health care and conditioning effect on lung,kidney and stomach.Therefore,the composition and efficacy of bird’s nest,identification method and deep processing technology were studied in this paper.
