摘要
研究油茶籽油在不同温度、气体、抗氧化剂条件下的储藏效果,测定储藏期间过氧化值、酸价、维生素E和角鲨烯4个指标在试验中的变化规律。结果表明,过氧化值、酸价在不同条件下随储藏时间的延长而增加,维生素E、角鲨烯含量在不同条件下随储藏时间的延长而减少,但油茶籽油在15℃、充氮、添加TBHQ抗氧化剂条件下的指标值变化最小,茶油品质劣变较缓慢。
The storage effect of Camellia oleifera seed oil under different temperature,gas and antioxidant conditions was studied.The changes of peroxide value,acid value,vitamin E and squalene during storage were measured.The results showed that the peroxide value and acid value increased with the extension of storage time under different conditions,the contents of vitamin E and squalene decreased with the extension of storage time under different conditions,but the index value of Camellia oleifera seed oil changed the least at 15℃,nitrogen filled and TBHQ antioxidant added,and the quality of camellia oil deteriorated slowly.
