摘要
清香型大曲白酒以高粱、大麦、豌豆等为原料,通过发酵、蒸馏、陈放等工艺制成。主要对以汾酒为典型的清香型大曲白酒生产工艺进行了研究,为清香型白酒品质提升提供了参考。
The pure flavor Daqu liquor was made from sorghum,barley and pea by fermentation,distillation and aging.The paper mainly studied the production technology of the pure flavor Daqu liquor,which was typical of Fenjiu,and provides reference for the improvement of the quality of the pure flavor liquor.
