摘要
【目的】为探究市售鹌鹑蛋中重金属元素对人体健康的影响。【方法】使用电感耦合等离子体发射光谱仪(ICPOES)测定包头市市售鹌鹑蛋蛋黄中的Pb、Cd、As、Fe、Mn、Zn、Cu 7种重金属含量,并根据国家标准通过单因子污染指数法、内梅罗综合污染指数法对样品中的重金属元素进行评价,采用蒙特卡罗模拟(MCS)模型计算风险商(THQ)、总风险商(TTHQ)评估了相关人类健康风险。【结果及结论】(1)鹌鹑蛋蛋黄中Pb超标率为100%,超过国家限量标准2.7倍。As总超标率为12%。(2)鹌鹑蛋总体受到轻污染,主要由Pb污染引起,(3)鹌鹑蛋对人体健康存在一定的健康风险,除As(THQ>1)外,其余6种元素的THQ<1,总体的TTHQ>1,复合风险主要由As引起;总健康风险值:儿童>女性>男性>1。
[Objective]To explore the effects of heavy metals on human health in commercially available quail eggs.[Methods]Inductively coupled plasma optical emission spectrometry(ICP-OES)was used to determine the contents of seven heavy metals in the egg yolk of quail eggs in Baotou City,including Pb,Cd,As,Fe,Mn,Zn and Cu,and the heavy metal elements in the samples were evaluated by the single factor pollution index method and the Nemerow comprehensive pollution index method according to the national standards,and the Monte Carlo simulation(MCS)model was used to calculate the risk quotient(THQ)and total risk quotient(TTHQ)to evaluate the relevant human health risks.[Results and conclusions](1)The excess rate of Pb in the yolk of quail eggs was 100%,which exceeded the national limit standard by 2.7 times.The total excess rate of As was 12%.(2)Quail eggs were generally lightly polluted,mainly caused by Pb pollution,and(3)quail eggs had certain health risks to human health,except for As(THQ>1),the THQ<1 of the other six elements,and the overall TTHQ>1,and the compound risk was mainly caused by As;Total health risk value:children>females>males>1.
