大米硒肽制备方法和生物活性的研究进展

Recent Progress and Future Trends on Preparation method and Biological Activity of Rice Selenium-Rich Peptides

摘要 硒是人体必需的微量元素之一,具有众多重要的生理功能。以富硒大米为原料制成有生物活性的硒肽,发挥其强抗氧化作用,有极大的增值效果。文章系统总结了肽的制备方法,同时,对大米硒肽的生物活性进行讨论,包括其抗氧化、抗炎、抗肿瘤和抗病毒等方面的研究进展;展望了大米硒肽在食品和药物领域的潜在应用价值,并提出未来的研究方向和挑战。综合国内外相关研究,文章将为硒肽的活性研究提供相应的理论依据,加大推进硒肽在食品开发中的应用。 Selenium(Se)is one of most important microelements in human body,which has multiple physiological functions.The bioactive selenopeptide made from selenium-rich rice has strong antioxidant effect and great value-added effects.In this review,the preparation methods of peptide were systematically summarized,and the biological activities of rice Se-containing peptide were discussed,including its antioxidation,anti-inflammation,anti-tumor and anti-virus.Finally,the potential application value of rice Se-containing peptide in the field of food and medicine was prospected,and proposed future prospects and challenges.Based on relevant research,this paper will provide the theory foundation for the research of selenopeptide activity,and promote its application of selenopeptide in food.
