六堡茶风味轮修订及其术语释义

摘要 为了让消费者更加全面、准确地认识、理解修订后的六堡茶风味轮中的术语含义,本研究通过引用现行的及曾经发布过的标准中的相关术语定义、科研文献中出现的相关术语释义及新创的术语释义,对修订后的六堡茶汤色轮、香气轮、滋味轮、韵味轮及风味轮中的术语含义进行全面的、系统的阐述。这次修订,香气轮中增加14个术语,滋味轮中增加10个术语,韵味轮中增加5个术语,风味轮中增加25个术语,其中新创术语20个;列出9类共180个术语的定义或释义,其中74个术语是首次释义,较好地解决了术语可能产生歧义和误解的问题。本研究通过用术语定义或释义为人们理解六堡茶丰富的风味提供了有效的途径,有利于六堡茶风味知识的传播和产业的健康发展。 In order to help consummers to fully and accurately understand the meaning of terms in the revised version of Liubao tea flavor wheel,explannations oftechnical terms aroma wheel,taste wheel,charm wheel and flavor wheel wereintroduced based on the definitions of relevant terms in existing and previously published standards and definitions in scientific research literature.In therevised revision,14 terms were added to the aroma round,10 terms were added to the taste round,5 terms were added to the flavor round,and 25 terms were added to the flavor round,including 20 new terms.The definition or interpretation of 180 terms in 9 categories is listed in this paper,of which 74 terms are interpreted for the first time.It will be helpfulto eliminate ambiguity and misunderstandingfor these terms.It is concluded that the definition or interpretation of terms provides an effective way for consummersto understand the rich flavor of Liubao tea,which is conducive to the dissemination of knowledge of Liubao tea flavor and promotes the healthy development of Liubao tea industry.
