摘要
采用8种包装方式对裹衣花生进行包装,通过schaal烘箱法进行加速氧化,每隔1天对产品进行感官评价,并对过氧化值、酸价以及TBA进行测定,分析裹衣花生储藏品质的变化。结果表明:8种包装方式均能在一定程度上减缓裹衣花生的变质,其中不透明铝箔袋+脱氧剂包装的贮藏效果最好,半透明铝箔袋+脱氧剂包装次之,二者显著性差异不明显(P>0.05),PET透明罐包装效果最差。综合考虑贮藏效果、透光性和包装成本,半透明铝箔袋+脱氧剂包装是裹衣花生产品适宜的包装方式。
The coated peanuts were packaged in 8 kinds of packaging methods,and the oxidation was accelerated by the Schaal oven method.The sensory evaluation,peroxide value,acid value and TBA were carried out every 2 days to analyze the changes in storage quality of coated peanut.The results showed that the deterioration of coated peanut could be slowed down to some extent by 8 packaging methods.The storage effect of opaque aluminum foil bag+deoxidizer package was the best,and that of translucent aluminum foil bag+deoxidizer package was the second,and there was no significant difference between the two(p>0.05)The packaging effect of PET transparent can was the worst.Considering the storage effect,light transmittance and packaging cost,semi-transparent aluminum foil bag+deoxidizer packaging is the suitable packaging method for coated peanut products.
