摘要
为更好地推测白酒研究领域的发展趋势,给学术界和研究机构提供有价值的信息,方便研究人员更好地制定未来的研究计划,本文采用文献计量学和知识图谱等方法,以2012年1月至2022年10月在CNKI期刊全文数据库中筛选出的1166篇白酒风险因子相关文献作为样本,通过引文网络分析工具CiteSpace进行可视化处理分析,以此进一步得到白酒在其风险因子领域的多视角看法、研究热点以及未来的研究方向。结果发现,国内目前高度关注白酒包装、白酒酿造、白酒风味等方面的研究,且白酒风险因子相关研究和白酒生产过程中的发酵特性、白酒蒸馏工艺中的农药残留、白酒包装过程中塑化剂的迁移和各种风险因子的分离鉴定等是当前学术研究的热点前沿。
In order to better speculate on the development trends in the field of Baijiu research,provide valuable information to academics and research institutions,and facilitate scholars to be able to better formulate their future research plans.In this paper,bibliometrics and knowledge mapping were used to visualise and analyse 1166 articles related to risk factors of Baijiu in the CNKI full-text journal database from January 2012 to October 2022 as a sample,using the citation network analysis tool CiteSpace,in order to obtain further information on baijiu in its The analysis was carried out by using the citation network analysis tool CiteSpace to obtain further information on the multiple perspectives,research hotspots and future research directions in the field of risk factors for Baijiu.The results found that the research on Baijiu packaging,Baijiu brewing and Baijiu flavour are currently of high interest in China,and that research related to Baijiu risk factors and fermentation characteristics in the production process of Baijiu,pesticide residues in the distillation process of Baijiu,migration of plasticisers in the packaging process of Baijiu and the separation and identification of various risk factors are hot frontiers in current academic research.
