冷链物流中预冷技术及其对果蔬品质影响的研究进展

摘要 预冷是冷链物流的首要环节,可快速去除果蔬的田间热和呼吸热,对减少果蔬采后损失、延长果蔬货架期有重要意义。本文综述了预冷技术在冷链物流行业中的发展与应用。概述了压差预冷、水预冷、真空预冷三种预冷技术工艺研究现状,以及三种预冷方式对果蔬品质的影响。提出了目前预冷技术在冷链物流行业应用中存在的问题,探讨了预冷技术的发展趋势,为预冷技术的改进和优化提供思路。 The first step in the cold chain logistics process is precooling,which may rapidly eliminate the field and respiratory heat from fruits and vegetables.It is of great significance to reduce the postharvest loss and extend the shelf life of fruits and vegetables.This paper reviews the development and application of precooling technology in cold chain logistics industry.The current state of study on three types of precooling technology,forced-air precooling,vacuum precooling and water precooling,as well as how each type of precooling method affects fruit and vegetable quality were compiled.In order to offer suggestions for the enhancement and optimization of precooling technology,the issues with its implementation in the cold chain logistics sector are presented,along with a discussion of the technology's development trend.
