摘要
目的了解2022年我国6省在外就餐场所加碘盐使用情况。方法随机抽取全国6省60个县(区)的3600多家在外就餐场所,从后厨采集50 g食用盐进行碘含量测定。结果共抽取3605家在外就餐场所,检测盐样3545份,碘盐覆盖率为92.9%,合格碘盐食用率为87.5%,碘盐合格率为94.2%,加碘盐的碘含量中位数为25.5 mg/kg。沿海地区在外就餐场所的碘盐覆盖率、合格碘盐食用率、碘盐合格率和盐碘中位数均显著低于内陆地区(χ^(2)=628.90,P<0.01;χ^(2)=479.98,P<0.01;χ^(2)=32.58,P<0.01;χ^(2)=89.59,P<0.01)。提供正餐服务的食堂/餐馆的碘盐覆盖率、合格碘盐食用率和碘盐合格率与提供快餐服务的食堂/餐馆无统计学意义(P>0.05)。单位食堂、中型餐馆和小型餐馆之间的碘盐覆盖率、合格碘盐食用率及碘盐合格率均无统计学意义(P>0.05)。结论我国内陆地区在外就餐场所碘盐使用情况良好,而沿海地区碘盐覆盖率较低。碘盐使用情况与餐馆性质、规模及餐馆提供的服务类型无关。
Objective To investigate the use of iodized salt in dine-out places in six provinces in 2022.Methods More than 3600 dine-out places in 60 counties in six provinces of China were randomly selected,and 50 g of edible salt were collected from the kitchens of the canteens or restaurants for iodine content determination.Results A total of 3605 dine-out places were selected,3545 salt samples were tested,and the coverage rate of iodized salt was 92.9%,the consumption rate of qualified iodized salt was 87.5%,the qualified rate of iodized salt was 94.2%,and the median iodized salt was 25.5 mg/kg.The iodized salt coverage rate,qualified iodized salt consumption rate,iodized salt qualified rate,and median iodized salt in dine-out places in coastal areas were significantly lower than those in inland areas(χ^(2)=628.90,P<0.01;χ^(2)=479.98.49,P<0.01;χ^(2)=32.58,P<0.01;χ^(2)=89.59,P<0.01).There were no significant differences in the coverage rate of iodized salt,consumption rate of qualified iodized salt and qualified rate of iodized salt between restaurants providing table service and those providing fast food service(P>0.05).There were no significant differences in iodized salt coverage rate,qualified iodized salt consumption rate and iodized salt qualified rate among canteens,medium-sized restaurants and small restaurants(P>0.05).Conclusion The use of iodized salt in dine-out places is good in inland areas of China,while the coverage rate of iodized salt in coastal areas is low.The size and nature of the restaurants,as well as the type of service,were not related to iodized salt use.
