摘要
为了提高益生菌冷冻干燥制剂产品复活率或延长货架期,可在冻干前进行各种保护性预处理,如热胁迫、冷处理、延长保护剂混合时间、包埋技术、发酵培养基渗透压处理和菌体收获期选择等方法,以及优化冻干制剂复水处理。本文总结常见益生菌冻干前保护性预处理措施及复活率变化,以针对不同菌株类型益生菌进行前处理方法的选择提供参考。
In order to improve the recovery rate or extend the shelf life of freeze-dried probiotics products,various protective pretreatment technologies before freeze-drying have been studied,such as heat stress,cold treatment,prolonging the mixing time of protective agents,embedding technology,osmotic pressure treatment of fermentation medium and the selection of cell harvest time,as well as the optimization of rehydration treatment of freeze-dried products.This paper summarizes the protective pretreatment measures and the changes of recovery rate of common probiotics before freeze-drying,in order to provide a reference for the selection of pretreatment methods for different strains of probiotics.
