摘要
目的:建立敞开式离子化质谱快速测定蛋糕中苋菜红、胭脂红、赤藓红、柠檬黄、日落黄及靛蓝的方法。方法:样品采用无水乙醇-氨水-水(7∶2∶1)提取,聚酰胺粉吸附、洗脱、浓缩和定容,加入各种甲醇稀释的合成着色剂标准品,在便携式离子阱质谱仪中直接进样,采用电喷雾离子源进行吸附和解离,并在正离子和负离子检测模式下分别进行检测。结果:6种合成着色剂的线性关系良好,相关系数R^(2)均大于0.99,加标回收率为75.43%~102.11%,精密度为4.38%~24.12%。二级质谱图扫描分析得到的定量离子对等信息准确。结论:本方法灵敏度高,准确性好,检测时间短,适用于蛋糕中苋菜红、胭脂红、赤藓红、柠檬黄、日落黄、靛蓝的现场快速测定。
Objective:To establish an ambient mass spectrometry method for simultaneous determination of amaranth,ponceau,erythrosine,tartrazine,sunset yellow and indigo in cakes.Method:Samples were extracted by anhydrous ethanol-ammonia-water(7∶2∶1)and adsorbed by the polyamide powder.Then samples were performed elution,concentration and fixed volume.All synthetic colorant standards were diluted with methanol and infused into samples,and were directly injected into portable ion trap mass spectrometer.Synthetic colorants were adsorbed and separated by electrospray ion source,and tested in positive ion and negative ion detection modes respectively.Result:The linear relationship of the 6 synthetic colorants was good,the correlation coefficient R^(2) was greater than 0.99,the recovery rate was 75.43%~102.11%,and the precision was 4.38%~24.12%.The quantitative ion equivalent information obtained by secondary mass spectrometry scanning analysis was accurate.Conclusion:The method has high sensitivity,good accuracy and short detection time,and is suitable for the rapid determination of amaranth,ponceau,erythrosine,tartrazine,sunset yellow and indigo in cake samples.
