摘要
宠物罐头食品开盖后会在空气中长时间暴露,这一过程中食品变质会给宠物健康造成不利影响。为了比较维生素C(VC)、维生素E(VE)、茶多酚(TP)、脂溶性迷迭香提取物(REO)、水溶性迷迭香提取物(REW)5种宠物食品中常见天然抗氧化剂的耐湿热灭菌能力,及添加高(500 mg/kg)、低(100 mg/kg)剂量抗氧化剂的犬粮罐头在办公室和犬舍环境中暴露24 h内菌落总数、pH、过氧化值的变化。结果表明:VC、VE及REW耐湿热灭菌能力较好,在空气中暴露24 h内,犬粮罐头菌落总数及过氧化值均有上升,pH无变化。VC、VE、REO抑菌能力较好,VE抑制油脂抗氧化能力优于其他天然抗氧化剂(P<0.05)。因此综合各项指标,对于延长宠物罐头开盖后变质时间,添加一定量的维生素E是较优的选择。
Canned pet food exposed to the air for a long time after being opened,and the deterioration of food could cause adverse effects on pet health during this process.In order to compare the hygrothermal sterilization resistance of natural antioxidants commonly found in five pet foods,vitamin C(VC),vitamin E(VE),tea polyphenols(TP),fat-soluble rosemary extract(REO)and water-soluble rosemary extract(REW),and the changes of bacterial count,pH and peroxide value of canned dog food with high(500 mg/kg)and low(100 mg/kg)doses of antioxidants in the office and kennel environment within 24 hours of exposure.The results showed that VC,VE and REW had good resistance to damp and heat sterilization.Within 24 hours of exposure in the air,the total bacterial count and peroxide value of canned dog food increased,and the pH did not change.VC,VE and REO had good bacteriostatic ability,and VE had better anti-oxidation ability than other natural antioxidants(P<0.05).Therefore,combining various factors,adding a certain amount of vitamin E is a better choice for prolonging the deterioration time of pet cans after opening.
