摘要
真菌毒素是食品工业中的重要污染物质,通过食物和饲料进入食物链中,其检测方法研究对于真菌毒素的控制具有重要作用。分析真菌毒素检测领域的发展现状,有助于明晰其领域的热点及发展动态,为后续研究提供帮助及参考。基于中国知网(CNKI)的文献数据,将研究成果进展脉络进行系统归纳分析表明,在毒素限量标准提出后,毒素的检测逐步成为研究热点,且检测技术逐步细化,重点在实现检测技术的快速、高效和技术广适性,其中将原有技术与新型材料结合、开发新检测方法成为重要的研究方向和内容,重点也更加集中在检测方法的稳定、快速、高效等方面。
Mycotoxins are important pollutants in the food industry.They enter the food chain through food and feed.The study of their detection methods plays an important role in the control of mycotoxins.Studying and analyzing the current development status of fungal toxin detection helps to clarify the hotspots and development trends in this field,providing assistance and reference for subsequent research.Based on literature data from China National Knowledge Infrastructure(CNKI),a systematic summary and analysis of the research progress shows that after the introduction of toxin limit standards,toxin detection has gradually become a research hotspot,and the detection technology is gradually refined,focusing on the speed,efficiency and broad technical applicability of the current detection technology,among which the combination of the original technology and new materials to develop new detection methods has become an important research direction and content,and the focus is more focused on the stability,speed and efficiency of the detection method.
