摘要
基于中国学术期刊全文数据库(CNKI),以“主题=(虚拟仿真) and (食品)”为检索条件,将检索到的2009—2022年间221篇期刊论文作为研究对象,利用Cite Space软件对2009—2022年间虚拟仿真技术在食品专业教学中应用和研究领域的研究现状、研究热点及发展趋势等进行可视化分析。结果显示:2009—2022年间,虚拟仿真技术在食品专业教学中的应用与研究相关文献量呈逐年增长趋势;发文量排名前3位的作者分别是刘贺、严志明和乔明武;机构分布以吉林大学食品科学与工程学院和河南农业大学食品科学技术学院为主;研究热点多围绕虚拟仿真、教学改革、实验教学、食品专业、实践教学等,主要应用于工程类专业课程的实验实训教学。虚拟仿真技术在高校食品专业教学中的应用与研究需要多方积极参与协作,这将会对食品行业发展、人才培养和仿真技术发展等提供一定借鉴和参考价值。
Based on the China Journal Full-text Database(CNKI),a total of 221 journal papers from 2009 to 2022 are retrieved as research objects,with“subject=(virtual simulation)and(food)”as the search conditions.Cite Space software is used to visually analyze the research status,research hotspots and development trends of virtual simulation technology in the teaching and research field of food major from 2009 to 2022.The results show that from 2009 to 2022,the amount of literature related to the application and research of virtual simulation technology in the teaching of food major increase year by year.LIU He,YAN Zhiming and QIAO Mingwu rank the top 3 authors in the number of publications.The main institutions are College of Food Science and Engineering,Jilin University and College of Food Science and Technology,Henan Agricultural University.The research focuses on virtual simulation,teaching reform,experimental teaching,food major,practical teaching,etc.Meanwhile,virtual simulation technology is mainly applied to the experimental and practical teaching of engineering major courses.The application and research of virtual simulation technology in the teaching of food major in colleges and universities need the active participation and cooperation of various parties,which will provide certain reference value for the development of food industry,talent training and simulation technology development.
