β-1,3-葡聚糖内切酶合成、制备及应用研究进展

摘要 β-1,3-葡聚糖内切酶是一类广泛存在于细菌、真菌和某些植物中,并能够水解β-葡聚糖产生不同分子量葡聚糖的酶。低分子量葡聚糖具有抗菌、抗氧化、免疫调节和抗肿瘤的生理活性,已在医药、食品、化工等多个领域显现良好的应用前景。目前生产低分子量葡聚糖的方法主要包括物理、化学和酶降解法。相较于物理和化学降解法,酶降解法具有催化效率高、反应条件温和、收率高及对环境友好等特点,但现阶段已开发的β-1, 3-葡聚糖内切酶的酶活性和稳定性仍无法满足工业化生产的需求。因此,开发适用于工业化生产的β-1,3-葡聚糖内切酶,已成为跨越通过降解高分子量葡聚糖制备低分子量葡聚糖技术壁垒的关键。本文系统介绍了β-1,3-葡聚糖内切酶的合成调节、特点、用于低分子量葡聚糖的制备以及工艺的优化等方面的研究进展,为促进β-1,3-葡聚糖内切酶的研究和工业化应用提供参考。 β-1,3-glucanase is a type of enzyme that is widely found in bacteria,fungi,and certain plants and is capable of hydrolyzingβ-glucans to produce glucan of different molecular weights.Low molecular weight glucan possesses unique physiological activities such as antibacterial,antioxidant,immunomodulatory,and antitumor effects,which have shown good prospects for application in many fields such as medicine,food,and the chemical industry.Currently,the methods for producing low molecular weight glucan mainly include physical,chemical and enzymatic degradation.Compared with physical and chemical degradation methods,enzymatic degradation has the advantages of high catalytic efficiency,mild reaction conditions,high yield and environmental friendliness.However,the enzyme activity and stability ofβ-glucanase currently developed cannot meet the needs of industrial production.Therefore,the development ofβ-glucanase suitable for industrial production has become the key to overcoming the technical barrier of preparing low molecular weight polysaccharides by degrading high molecular weight glucan.This paper reviews the research progress of the synthesis regulation,characteristics,preparation of Endo-β-1,3-glucanase,including production and process optimization of low molecular weight glucan,The aim is to provide a reference for promoting research and industrial application of Endo-β-1,3-glucanase.
