日粮淀粉和蛋白质消化动力学在肉鸡生产中的应用研究进展

摘要 日粮淀粉和蛋白质在肠道内分解为葡萄糖、氨基酸和小肽,为肉鸡提供生命活动所需的营养来源。肠道中葡萄糖和氨基酸交互作用会影响日粮淀粉和蛋白质的利用效率。葡萄糖释放速率过慢,氨基酸释放速度过快,肠黏膜组织分解利用氨基酸,降低氨基酸用于蛋白质合成的比例;葡萄糖释放速率过快,葡萄糖和氨基酸在肠道上皮转运存在竞争性抑制,降低氨基酸的吸收和利用。文章综述了不同淀粉和蛋白质的消化特点以及淀粉和蛋白质消化动力学对肉鸡生理代谢和生长性能的影响,以期为科学合理配制日粮、提高肉鸡生产性能提供理论支持。 Starch and protein are digested in intestine into glucose,amino acids and small peptides.Glucose and amino ac-ids provide energy and nutrient sources required for broiler life activities.The interaction of glucose and amino acids in the intes-tine affects the efficiency of starch and protein utilization in the diet.When the rate of glucose release is too slow and the rate of amino acid release is fast,the intestinal mucosal tissues break down and use the amino acids,reducing the proportion of amino ac-ids used for protein synthesis.When the rate of glucose release is too fast,there is competitive inhibition between glucose and ami-no acids for nutrient uptake by broiler intestine,reducing amino acid absorption and utilization.This paper reviewed the digestive characteristics of different starches and proteins,and the effects of starch and protein digestion and digestion kinetics on physio-logical metabolism and growth performance of poultry,which would provide theoretical support for scientific and rational diet for-mulation and improving broiler production performance.
