摘要
肉制品在日常饮食中占据重要地位,其质量与安全一直是消费者关注的问题,光谱技术因其快速、无损、成本低等特点被越来越多地应用于肉制品质量与安全检测中。介绍了光谱技术用于肉品品质检测的原理,综述了光谱技术在肉制品无损检测中的应用进展,特别是在肉制品真实性、肉制品品质指标等方面的应用,研究可能会加速光谱技术在肉制品质量检测中的标准化,从而更快、更有效地检测产品品质。
Meat products occupy an important position in daily diet,and its quality and safety has always been the concern of consumers.Spectral technology is more and more employed in the quality and safety detection of meat products because of its fast,non-destructive and low cost characteristics.In this paper,the principle of spectroscopic technology for meat quality detection was introduced,and the application progress of spectroscopic technology in non-destructive detection of meat products was reviewed,especially in the aspects of authenticity and quality index of meat products.By summarizing these studies,the standardization of spectroscopic technology in meat quality detection may be accelerated,thus allowing faster and more effective detection of product quality.
