新型食品安全检测技术研究进展

Advances in Novel Food Safety Testing Technologies

近年来,食品安全事件时有发生,形势不容乐观,成为威胁人类健康安全的一大隐患,受到全世界范围的高度重视,该问题亟需解决。高效灵敏的检测技术是保障食品安全的重要手段,相较于食品行业传统的检测技术,各种新型食品安全检测技术的优势更为显著,所以对于新型食品安全检测技术的研究具有一定现实意义。基于物理、化学和生物3个层面综述了近年来各种新型食品安全检测技术的研究成果,简要介绍了检测技术的原理、适用范围、优势和不足,以及国内外关于新型食品安全检测技术的典型应用成果。最后,提出了针对食品安全检测领域的优化建议,以期为后续的食品检测工作提供参考依据,促进食品行业更好、更健康的发展,保障我国国民食品安全。

In recent years,food safety incidents occured frequently and the situation is not optimistic.A series of food safety problems have become a major threat to human health and safety,which have attached great importance to all over the world.The issue needs to be addressed urgently.Compared with the traditional detection technologies in the food industry,various new food safety detection technologies have more significant advantages in terms of sensitivity and efficiency in food detection.So the research on new food safety detection technology has certain practical significance.This paper reviewed the research results of various new food safety testing technologies at the physical,chemical and biological levels,briefly introducing the testing principles,scope of application,advantages and shortcomings of the testing technologies,as well as the typical application results of the new food safety testing technologies at home and abroad.Finally,we offered some suggestions for the optimization in the field of food safety testing,so as to provide a reference basis for the subsequent food testing work,promote a better and healthier development of the food industry,and guarantee the national food safety in China.
