摘要 随着食品安全问题的日益突出,传统的食品检测技术已难以满足快速、精准检测的需求。生物检测技术,尤其是生物传感技术、基因组学和代谢组学技术,因其高灵敏度、特异性和高通量检测能力,在食品安全检测中展现出巨大潜力。本文探讨了这些技术在食品检测中的应用,并针对当前食品检测技术存在的问题,如低灵敏度与特异性、检测周期长、成本高以及数据分析和决策系统不足,提出了优化策略。这些策略包括构建高特异性生物识别元件库、开发多元化的生物识别信号转换系统、建立基于生物传感的便携式快速检测系统、开发低成本生物芯片及试剂盒,以及利用生物信息学方法强化海量检测数据的挖掘利用。通过这些措施,有望构建一个快速、高效的食品安全监测体系,为食品安全监管提供科学依据。 With the increasingly prominent food safety issues,traditional food testing techniques are no longer able to meet the needs of fast and accurate testing.Biological detection technologies,especially biosensing,genomics,and metabolomics,have shown great potential in food safety monitoring due to their high sensitivity,specificity,and high-throughput detection capabilities.This article explores the application of these technologies in food detection and proposes optimization strategies to address the current issues in food detection technology,such as low sensitivity and specificity,long detection cycles,high costs,and insufficient data analysis and decision-making systems.These strategies include building a highly specific biometric component library,developing diversified biometric signal conversion systems,establishing a portable rapid detection system based on biosensing,developing low-cost biochips and reagent kits,and utilizing bioinformatics methods to enhance the mining and utilization of massive detection data.Through these measures,it is expected to build a fast and efficient food safety monitoring system,providing scientific basis for food safety supervision.
