摘要 食品是人类生存和发展的基础,食品安全是社会稳定和人们健康的重要保障。随着社会经济的发展和人们生活水平的提高,人们对食品的需求和期望越来越高,食品生产和消费的规模和范围也不断扩大,食品质量和安全问题也日益突出。食品生产过程中的质量控制和食品安全管理是保证食品质量和安全的关键环节,也是提高食品企业的竞争力和社会责任的重要手段。本文从食品生产过程的特点和风险出发,分析了食品生产过程中质量控制和食品安全管理的目的、原则和内容,探讨了食品生产过程中质量控制和食品安全管理的方法和措施,以及食品生产过程中质量控制和食品安全管理存在的不足,并提出了食品生产过程中质量控制和食品安全管理的建议。 Food is the basis of human survival and development,and food safety is an important guarantee for social stability and national health.With the development of social economy and the improvement of people’s living standards,people’s demand and expectations for food are becoming higher and higher,the scale and scope of food production and consumption are also expanding,and the problems of food quality and safety are becoming increasingly prominent.Quality control and food safety management in the process of food production are the key links to ensure food quality and safety,and also an important means to improve the competitiveness and social responsibility of food enterprises.Starting from the characteristics and risks of food production process,this paper analyzes the purpose,principles and contents of quality control and food safety management,discusses the methods and measures of quality control and food safety management,and quality control and food safety management,and the deficiencies in quality control and food safety management in the food production process were identified,and suggestions for quality control and food safety management in the food production process were proposed.
