Food is the basis of human survival and development,and food safety is an important guarantee for social stability and national health.With the development of social economy and the improvement of people’s living standards,people’s demand and expectations for food are becoming higher and higher,the scale and scope of food production and consumption are also expanding,and the problems of food quality and safety are becoming increasingly prominent.Quality control and food safety management in the process of food production are the key links to ensure food quality and safety,and also an important means to improve the competitiveness and social responsibility of food enterprises.Starting from the characteristics and risks of food production process,this paper analyzes the purpose,principles and contents of quality control and food safety management,discusses the methods and measures of quality control and food safety management,and quality control and food safety management,and the deficiencies in quality control and food safety management in the food production process were identified,and suggestions for quality control and food safety management in the food production process were proposed.
