摘要
近年来,随着城市化进程加快,各类食品流通更为频繁,食品安全问题日益凸显,人们越来越关注食品安全,而准确、快速的检测方法是保证食品安全的重要手段。本文介绍了胶体金免疫层析技术的基本原理和制备方法,并概述了其在检测食品中农药残留、霉菌毒素、食源性致病菌、重金属和非法添加剂等方面的应用及前景,为我国食品安全快速定量检测技术提供思路方法。
In recent years,with the acceleration of urbanization,the circulation of various foods has become more frequent,and food safety issues have become increasingly prominent.People are paying more and more attention to food safety,and accurate and rapid detection methods are important means to ensure food safety.This paper introduces the basic principle and preparation method of colloidal gold immunochromatography technology,and outlines its application and prospects in the detection of pesticide residues,mycotoxins,foodborne pathogens,heavy metals,and illegal additives in food,providing ideas and methods for rapid quantitative detection of food safety in China.
