市售豆瓣菜的镉、铅污染特征分析——以广州、惠州市为例

摘要 通过对广州、惠州市的33个市场的99个豆瓣菜样品的Cd、Pb质量分数调查分析,结果表明:按照《食品安全国家标准食品中污染物限量》(标准GB2)叶菜蔬菜类对污染物限量要求,豆瓣菜样品Cd、Pb质量分数均没有超出标准要求范围,样品全部合格。摄食豆瓣菜风险评估表明:广州、惠州市的市民总体平均食用豆瓣菜的Cd、Pb质量分数EDI值为0.075、0.245μg/(kg·d),分别为FAO/WHO食品添加剂专业委员会建议的最大耐受量的18.75%和17.13%,THQ(Cd)、THQ(Pb)和TTHQ值分别为0.210、0.059、0.269,均小于1,因此,食用调查市场的豆瓣菜是安全的,总体风险较低。 The cadmium(Cd)and lead(Pb)contents of 99 watercress samples from 33 markets in Guangzhou and Huizhou were investigated.The results showed that,the cadmium and lead content of watercress samples did not exceed the range of the standard requirements,and the cadmium and lead exceed the standard rate is zero,making all of these products qualified under the National food safety standard Maximum levels of contaminants in foods(GB2).The Estimated daily intake(EDI)values of Cd and Pb content of watercress in Guangzhou and Huizhou were 0.075 and 0.245μg/(kg·d).It was only 18.75%and 17.13%of the maximum tolerable does recommended by JECFA(FAO/WHO Expert Committee on Food Additives).The values of Target hazard quotients(THQ)Cd,Pb and Total target hazard quotients(TTHQ)are 0.210,0.059 and 0.269,which are all less than 1.Therefore,the overall risk of eating watercress from the investigated market is low.
