花青素的生物活性及其在动物应用中的研究进展

摘要 花青素又称花色素,是自然界中广泛存在的一种水溶性天然食用色素,具有抗炎、抗氧化、抗肥胖、免疫调节、神经保护等作用。花青素大多数都是从水果、谷物、植物中提取出来的,对光照、温度、pH、金属离子、氧化剂等因素敏感,现已知的花青素有22大类250多种,主要包括天竺葵色素、矢车菊色素、飞燕草色素、芍药色素、牵牛花色素和锦葵色素等六种。目前花青素被广泛用于保健品、医药、化妆品以及食品着色等方面。文章就花青素的生物活性以及在动物生产中的应用进展进行综述,旨在为高效利用花青素提供理论依据。 Anthocyanidin,also known as anthocyanin,is a water-soluble natural food pigment widely existing in nature,which has anti-inflammatory,antioxidant,anti-obesity,immunomodulatory and neuroprotective effects.Most anthocyanins are extracted from fruits,grains,and plants,and are sensitive to factors such as light,temperature,pH value,metal ions,and oxidants.There are currently 22 major categories of anthocyanins,over 250 types,among which there are mainly 6 types,namely geranium pigments,cornflower pigments,oat pigments,peony pigments,morning glory pigments,and mallow pigments.Currently,anthocyanins are widely used in health products,pharmaceuticals,cosmetics,and food coloring.In this article,the physical and chemical properties of anthocyanidin and its application in animal production were reviewed.The purpose is to provide a theoretical basis for the efficient use of anthocyanidin.
