摘要 预制菜是通过标准化生产的半成品菜肴,因其符合餐饮市场降本增效和消费者快节奏生活的需求,未来发展前景广阔。文章分析了我国预制菜产业的发展现状和存在问题,如产品缺乏特色,风味、营养、品质难保持,食品质量安全难监管,生产装备不足,加工技术落后,产业链管理不完善等;并从提高产品质量、优化技术体系、升级生产装备、完善标准体系、推进产业数字化升级、加强专业人才培养等角度提出相应的对策建议,以期为提高我国预制菜产业的经济效益和竞争力提供参考。 Prepared food are semi-finished dishes produced through standardization,and their future development prospects are broad because they meet the cost reduction and efficiency increase needs of the catering market and the fast-paced lifestyle of consumers.This paper analyzed the problems existing in the development of prepared food industry,such as the lack of product characteristics,the difficulty in maintaining flavor,nutrition and quality,the difficulty in food quality and safety supervision,the lack of production equipment,underdeveloped processing technology and imperfect industrial chain management.Furthermore,we put forward relevant countermeasures and suggestions from the perspectives of improving product quality,optimizing technical system,upgrading production equipment,perfecting standard system,promoting industrial digital upgrading,and strengthening professional personnel training.This review would provide useful references for improving the economic benefits and competitiveness of prepared food industry in China.
