发酵豆渣复合物对武冈铜鹅生长性能、屠宰性能、肉品质和血清生化指标的影响

Effects of Fermented Soybean Residue Complex on Growth Performance,Slaughter Performance,Meat Quality and Serum Biochemical Indexes of Wugang Tong Geese

摘要 试验旨在研究饲粮中添加不同水平发酵豆渣复合物对武冈铜鹅生长性能、屠宰性能、肉品质和血清生化指标的影响。试验选择50日龄健康武冈铜鹅144只,随机分为4个组,每个组6个重复,每个重复6只鹅(公母各半);对照组饲喂基础饲粮,试验组饲喂在基础饲粮中分别添加3%、6%、9%的发酵豆渣复合物的试验饲粮,试验期20天。结果显示:①与对照组相比,3%试验组平均日采食量显著提高(P<0.05)。②各组武冈铜鹅的屠宰率、半净膛率、全净膛率、胸肌率、腿肌率和腹脂率间均无显著差异(P>0.05)。③与对照组相比,9%试验组胸肌pH_(24h)显著提高(P<0.05),6%试验组腿肌L^(*)_(24h)值显著降低(P<0.05);9%试验组腿肌b^(*)_(24h)值显著高于对照组和3%试验组(P<0.05);6%试验组腿肌蒸煮损失显著低于对照组和3%试验组(P<0.05)。④对照组肝脏指数为25.73%,3%、6%试验组肝脏指数分别为32.57%和32.59%,各提高了26.58%和26.66%(P<0.05)。⑤饲粮中添加发酵豆渣复合物显著提高了血清中总蛋白(TP)含量(P<0.05);试验组血清中球蛋白(GLB)含量有提高的趋势(0.05≤P<0.10),尿素氮(BUN)含量具有降低趋势(0.05≤P<0.10)。综上所述,发酵豆渣复合物改善了武冈铜鹅生长性能、肉品质,促进了蛋白质代谢和肝脏发育,在50~70日龄武冈铜鹅饲粮中发酵豆渣复合物适宜添加水平为3%~6%。 The purpose of the experiment was to study the effects of adding different levels of fermented soybean residue complex on growth performance,slaughter performance,meat quality and serum bio-chemical indices of Wugang Tong geese.A total of 144 healthy 50-day-old Wugang Tong geese were randomly divided into 4 groups with 6 replicates per group and 6 geese per replicate(half male and half female).The control group was fed a basal diet,and the experimental groups were fed the basal diet supplemented with 3%,6%and 9%fermented soybean residue complex,respectively.The experi-ment lasted for 20 days.The results showed as fol-lows:①compared with the control group,the av-erage daily feed intake of 3%experimental group was significantly increased(P<0.05).②There were no significant differences in dressing percent-age,half-eviscerated percentage,eviscerated percentage,breast muscle percentage,leg muscle percent-age and abdominal fat percentage among all groups(P>0.05).③Compared with the control group,the pH_(24) h of breast muscle in 9%experimental group was significantly increased(P<0.05),leg muscle L^(*)_(24) h value of 6%experimental group was significantly decreased(P<0.05);leg muscle b^(*)_(24) h value of 9%ex-perimental group was significantly higher than that of control group and 3%experimental group(P<0.05);leg muscle cooking loss in 6%experimental group was significantly lower than that in control group and 3%experimental group(P<0.05).④The liver index of the control group was 25.73%,while the liver in-dex of the 3%and 6%experimental groups was 32.57%and 32.59%,respectively,with an increase of 26.58%and 26.66%(P<0.05).⑤Dietary fermented soybean residue complex significantly increased the serum total protein(TP)content(P<0.05).The serum globulin(GLB)of experimental group had a ten-dency to increase(0.05≤P<0.10),and urea nitrogen(BUN)had a tendency to decrease(0.05≤P<0.10).In conclusion,fermented soybean residue complex can improve the growth performance,meat quality,pro-tein metabolism and liver development of Wugang Tong geese,and the appropriate supplemental level of fermented soybean residue complex in 50 to 70 days of age of Wugang Tong geese is 3%to 6%.
