沙棘籽油脱色参数优化及效果的评价

摘要 为探究沙棘籽油的脱色参数及脱色对其品质的影响,以沙棘籽原油为试材,首先从4种脱色剂中优选1种脱色剂,并对该脱色剂进行添加量、脱色温度及脱色时间的单因素实验和正交优化实验,获得最佳脱色参数。在此条件下,分析脱色沙棘籽油的常规理化指标、脂肪酸种类及相对含量、体外抗氧化活性,评估凹凸棒土的脱色效果。结果表明:沙棘籽油的最佳脱色剂为凹凸棒土;最佳脱色参数为添加4%凹凸棒土,50℃脱色10 min,脱色率可达26.93%。脱色后,色泽由橙红色转为橙黄色,水分、挥发物含量和酸价下降,脂肪酸的种类及多不饱和脂肪酸的相对含量未显著改变,羟自由基的清除率及总还原能力变化不显著。凹凸棒土可以作为沙棘籽油良好的潜在脱色剂进行开发利用。 To explore the decolorization parameters of sea-buckthorn seeds oil and the effects on the quality,the crude sea-buckthorn seeds oil was used as test material,one kind of decolorant selected from four,and the single factor and orthogonal optimization tests were carried out on the addition amount,decolorization temperature and decolorization time of the decolorizing agent to obtain the best decolorization parameters.Under these conditions,the conventional physical and chemical indexes,types and relative contents of fatty acids,and in vitro antioxidant activity of decolorized sea-buckthorn seed oil were analyzed,and the decolorization effect of attapulgite was evaluated.The results indicated that attapulgite was the best decolorizing agent for sea-buckthorn seeds oil.The best decolorization parameter was to add 4%attapulgite,decolorize at 50℃ for 10 minutes,and the decolorization rate reached 26.93%.After decolorization,the color of sea-buckthorn seeds oil changed from red to yellow,the content of water,volatile matter and acid value decreased,the types of fatty acids and the relative content of polyunsaturated fatty acids did not change significantly,and the scavenging rate of hydroxyl radicals and the total reducing capacity did not change significantly.Attapulgite can be used as a potential decolorizing agent for sea-buckthorn seeds oil.
