摘要
目的:分析2019—2022年太原市餐饮食品小吃抽检情况,为食品安全监管提供对策和建议。方法:对太原市5种餐饮小吃进行随机取样,对苯甲酸及其钠盐、脱氢乙酸及其钠盐、山梨酸及其钾盐、SO2残留量、铝残留量、铅含量等指标进行检测。结果:共抽检餐饮小吃865份,合格723份,2019—2022年合格率分别为72.1%、80.8%、87.3%、91.2%。经χ~2检验,不同年份间差异具有统计学意义。结论:2019—2022年太原市部分餐饮食品小吃安全合格率逐年升高,各类餐饮食品小吃监测合格率不同,各类餐饮食品小吃监测指标不合格率分布不均,并针对性地提出了相应的对策和建议。
Objective:This paper analyzes the sampling inspection of catering food snacks in Taiyuan from 2019to 2022,and provides countermeasures and suggestions for food safety supervision.Method:Five kinds of snacks in Taiyuan were randomly sampled,and the contents of benzoic acid and its sodium salt,dehydroacetic acid and its sodium salt,sorbic acid and its potassium salt,SO_(2) residue,aluminum residue and lead content were detected.Result:A total of 865 catering snacks were sampled and 723 were qualified.The qualified rates from 2019 to 2022 were 72.1 %,80.8 %,87.3 % and 91.2 %,respectively.By chi-square test,the difference between different years was statistically significant.Conclusion:From 2019 to 2022,the safety qualification rate of some catering food snacks in Taiyuan increased year by year.The monitoring qualification rate of various catering food snacks was different,and the unqualified rate of monitoring indicators of various catering food snacks was unevenly distributed,and corresponding countermeasures and suggestions were put forward.
