岩泊渡红薯粉丝制作技艺的传承与保护研究

摘要 张家界市慈利县岩泊渡粉丝有着420多年的历史,但是由于传统技艺加工方式劳动强度大且生产效率不高,市场价格竞争激烈,现代化加工无需添加明矾照样可生产出质量安全的产品,导致传统技艺生产加工实际处于濒危状态。文章通过对张家界慈利地区进行实地调研,从岩泊渡红薯粉丝的历史渊源、传承谱系、传承价值和面临的困境入手,提出岩泊渡红薯粉丝的传承与保护建议。 Cili County in Central China's Hunan Province has been making sweet potato vermicelli for more than 420 years.However,because of the intense labor in traditional processing techniques and the low efficiency in production,traditional production techniques are gradually giving their way to a modern mechanism which offers more competitive prices.Unlike traditional art production and processing techniques,the modern mechanism can turn out high-quality and safe products without adding alum,thus endangering traditional techniques.This paper explores the historical origin,pedigree,and value of Yanbodu sweet potato vermicelli making techniques through field research in Cili County of Zhangjiajie City.It also discusses the difficulties in inheriting these techniques and provides suggestions for their inheritance and protection.
