摘要
酶技术作为一种应用广泛、优势突出的生物技术,在食品加工与检测中发挥着重要作用。基于此,本文分析了酶技术在食品加工和保鲜中的应用,介绍了酶联免疫分析法、酶生物传感器检测法和酶促恒温核酸扩增技术在食品质量检测中的应用原理和优势,以供参考。
Enzyme technology,as a widely used and advantageous biotechnology,plays an important role in food processing and detection.Based on this,this article analyzes the application of enzyme technology in food processing and preservation,introduces enzyme-linked immunosorbent assay,enzyme biosensor detection,and enzyme catalyzed constant temperature nucleic acid amplification technology,and their application principles and advantages in food quality testing for reference.
