解酒机制及解酒产品研究进展

摘要 酒是中华文化的一种载体,蕴含着丰厚的历史意义,也是聚会、餐饮、宴席上的常用饮品。但是我国饮酒人群数量庞大,酒精对人体健康、社会安全带来的危害不容小觑,因此解酒产品的研发逐渐受到大家的重视。目前国内外的解酒产品种类多样,其主要功效不仅能通过提高乙醇脱氢酶、乙醛脱氢酶的活性,从而加速酒精的代谢速率,还能减轻酒精对肝脏的损伤。该文介绍了体内酒精的分解代谢过程及醉酒、解酒机制,重点阐述了解酒效果的评判指标,此外,综述了国内外解酒保健产品的研发情况,对具有解酒护肝作用的食品、中药材、微生物进行了介绍,并对解酒产品的研发进行了讨论与展望。 Alcoholic drink is a carrier of Chinese culture,which contains abundant historical significance.It is also a common drink for gatherings,caterings,and banquets.However,for the large number of Chinese drinker,the harm that alcohol brings to human health and social security should not be underestimated.Therefore,the research and development of anti-alcoholic products has gradually received attention.At present,there are various kinds of anti-alcoholic products at home and abroad.Its main effect can not only accelerate the metabolic rate of alcohol by improving the activities of alcohol dehydrogenase and acetaldehyde dehydrogenase,but also reduce the damage of alcohol to the liver.In this paper,the catabolic process of alcohol in the body and the mechanism of drunkness and anti-alcoholism were introduced,and the evaluation indexes for understanding the effect of anti-alcohol were emphasized.In addition,the research and development of anti-alcoholic health care products at home and abroad were reviewed,and the food,Chinese medicinal materials and microorganisms that have the effects of anti-alcohol and liver protection were introduced,and the research and development of anti-alcoholic products were discussed and prospected.
