摘要
黑色素在动植物中广泛存在,酪氨酸酶(EC 1.14.18.1,Tyrosinase, TYR)是催化黑色素生成过程中的一个限速酶.酪氨酸酶抑制剂在医药、化妆品、食品工业等领域应用广泛,但目前应用的酪氨酸酶抑制剂往往存在稳定性及安全性问题.因此,研究者们不断的筛选出天然来源的酪氨酸酶抑制剂,在这过程中筛选方法也在不断创新.本文在结合前人研究成果的基础上,介绍了酪氨酸酶在食品、医疗美容以及农业中的作用,并对目前酪氨酸酶抑制剂筛选方法等内容进行整理和归纳,以期能够为高效、便捷地从天然产物中筛选出有效的酪氨酸酶抑制剂,为其更好地应用于实际生产中奠定理论基础.
Melanin is widely present in plants and animals,and tyrosinase(tyrosinase,TYR)is the first and only rate-limiting enzyme that catalyzes melanin production.Tyrosinase inhibitors are widely used in medicine,cosmetics,food industry and other fields,but the current tyrosinase inhibitors often have stability and safety problems.Therefore,people are more inclined to screen tyrosinase inhibitors from natural sources,and their screening methods are constantly innovative.Based on the previous research results,this paper introduced the role of tyrosinase in food,medical cosmetics and agriculture,and summarized the current screening methods of tyrosinase inhibitors,so as to effectively and conveniently screen out effective tyrosinase inhibitors from natural products and lay a theoretical foundation for their better application in practical production.
